This cut comes from the shoulder. Its texture is similar to flank steak, but with much more marbling. Great for grilling, this cut takes very well to being marinated before cooking.

Cooking Tips:

Season with salt and pepper and grill or pan sear on medium high heat for 2-3 minutes per side. Let rest for 2-3 minutes before slicing thinly against the grain. Best served medium.
